Need more energy?

I have struggled this year.  I have struggled to get up in the morning, I’ve struggled to fall asleep at night.  I’ve struggled to stay awake between 12 noon and 3pm.  I’ve struggled to eat well, find clean clothes.  At the centre of this issue is this:  I was very sick during January and with 3 kids – one being very tiny – I’ve struggled to recover. I have struggled to fuel my body and fill the...

Cookie dough style biscuits for winners

This is another miraculous recipe from Quirky Cooking.  I told you Jo was amazing… You can make these by hand or in the thermomix and store in the freezer for quite some time.  I prepped these the week before the party and simply pulled them out at the last minute. My only substitute here was not adding the coconut sugar.  I used the prescribed quantity of rice malt syrup and then nothing else.  The quinoa flakes are fabulous in...

Sin Free Caramel Slice

Do I need to say anything more?  Packed with dates, nuts and loaded with GOOD fats, this slice is fabulous. Quick tips: Make a double batch and prep it in a lamington tin. Cream cheese, hold the dairy, thanks!

I love cream cheese used as a base for icings or dips but since jumping on the gluten free, dairy free and (mostly) sugar free bandwagon I’ve not known how to substitute it for a dairy free version.  Enter Jo Whitton from Quirky Cooking who has a solution for every GF DF problem you will ever encounter. Truly, this woman is amazing. She has created a substitute using almonds and sunflower seeds that you can find here. I made a...

Lemon Bliss Balls.

The mark of a great lemon dish is fabulous, tangy flavour that keeps you coming back for more.  I tend to modify lemon recipes to increase the quantities of lemon because quite frankly, if it’s not tangy I’m just not interested. So here is my tangy lemon bliss ball recipe.  I’ve used rice malt syrup instead of honey, increased the lemon juice content compared to standard recipes and provided non-thermomix protocol....
